Pasta Making at Pepe Sale
Most days Chef/Proprietor Toni Sale prepares and makes a selection of fresh pasta for use in the restaurant, he can often be seen doing this at lunchtime or early evening as his pasta making area is in the front window of the restaurant, by the bar. Besides the more usual pasta varieties, Toni likes to create specially flavoured pastas and pasta with unusual fillings, the following video is an example of some of them:
1. Ravioli alla ricotta e spinaci - 50% durum wheat flour and 50% 00 flour, eggs, extra virgin olive oil, water, ricotta cheese, spinach & seasoning
2. Fettuccine alla rucola - 50% 00 flour and 50% durum wheat flour, fresh rocket pesto, eggs & water
3. Spaghetti al nero di seppia - 70% 00 flour and 30% durum wheat flour, eggs, water & black squid ink
Obviously the amounts used for each will depend on the amount of pasta you wish to make, but these are the basic ingredients. Toni uses a commercial pasta machine because of the quantity he is making, however all of these pastas can be made with a hand operated pasta machine.
